Dr. Arland T. Hotchkiss, Jr. is a USDA scientist with the Agricultural Research Service near Philadelphia, PA. He is a plant physiologist and analytical chemist who works with prebiotics and probiotics in Dairy and Functional Foods research. His post-harvest research develops new dairy products that promote health and prevent diseases.
